To best enjoy your San Nicola spelt soup, chop the onion and celery finely and saute in a pan with the oil and tomato.
Pour in the water and when it boils add the spelt.
Cook for about one hour, stirring frequently.
Add a pinch of chili pepper if you like when almost cooked.
Drizzle with P.D.O. Umbria oil and serve.
