Roman-Style Artichokes

Ingredients (4 servings)

  • 4 Roman artichokes
  • 2 garlic cloves
  • Roman mint to taste
  • Parsley to taste
  • Salt and pepper to taste
  • Water as needed
  • Olio di Roma PGI Primoli

Preparation

Clean the artichokes by removing the outer leaves and gently opening the inner ones.
Chop the garlic, mint, and parsley. Fill the artichokes with the chopped mixture, salt, and pepper.
Place them upside down in a pan with Olio di Roma PGI PrimOli and water at the bottom. Cook covered for 30–35 minutes.
