Tuna Stew


  • 1 tuna fillet (approx. 800 g)
  • 4-5 garlic cloves
  • 4-5 emperor’s mint
  • 300 g double concentrated tomato paste
  • P.G.I. Sicilia Oil


To prepare a delicious Tuna Stew insert the skinned garlic cloves and the mint leaves inside the tuna fillet by making small incisions and sprinkle with salt.
Sear the fillet in a pan with oil for about 10 minutes turning it over a couple of times until brown.
Once browned, remove the fish and set aside, add the tomato paste and some water to the pan and cook for about ten minutes.
Place the tuna fillet back in the pan and let it simmer slowly for about 40 minutes, adding some white pepper at the end. Drizzle some olive oil and serve hot as a main course or use it as a sauce for pasta.
