Marinate the trout fillets in lemon juice and oil for 24 hours in the refrigerator.
Cut the fillets into thin slices and arrange them on individual plates.
Decorate with the orange peel cut into matchsticks and drizzle with P.D.O. Garda oil.
Serve with warm bread croutons and curls of butter.
