NOTE: + 1 hour marinating
Mix the lemon juice, P.G.I. Toscano oil and freshly ground pepper in a bowl.
Pour this marinade over the cubes of lamb and set aside to marinate for one hour.
Prepare the skewers, arrange them on a grill about 10 centimetres over the coals and cook for 10 minutes.
Baste frequently with the marinade, turn the skewers and continue cooking for five more minutes.
Add salt, thyme and lemon zest.
